Vindaloo Masala is a Goan classic, but it's reputation from UK restaurants does tend to terrify people! Goa is a small state in South West India which has been heavily influenced by the Portuguese who were in India for over 400 years. Our mixture uses a complex blend of aromatic spices including fennel, cloves and star anise that work beautifully with the vinegar and chilli.
Did you know a traditional Vindaloo would once have been a combination of 'Vinha' - wine vinegar and 'd'Alho' garlic.
