Lamb Rogan Josh
You will need:
2 tbs oil
2 red onions, chopped
1 tbs Nature Kitchen Rogan Josh Spice Blend
1 tsp tomato puree
450g (1lb) lamb shoulder, cooked and diced
200ml (7oz) water
4 tomatoes, quartered
Juice of 1 lemon
Sea salt to season
Pilau rice to serve
1. Heat the oil in a large heavy-based saucepan, add the onions and the Rogan Josh Spice Blend and cook for 10 minutes.
2. Add the tomato puree and cook for a further minute.
3. Add the diced lamb, water, tomatoes and lemon juice.
4. Simmer for 15 minutes, then season to taste and serve with Pilau Rice.
