Curry Leaves

A popular spice used for rich flavour as well as decoration in a traditional curry meal

Used much like bay leaves, curry leaves are used largely in curries. 

Usually, fried along with the chopped onion in the first stage of the preparation. In their fresh form, they have a short shelf life and they don't keep well in the refrigerator. They last well in their dried form, though the aroma is largely inferior.
