This is the inner bark of True Cinnamon. When ground down, its delicious when used in breads, cakes, desserts, custard, ice cream and drinks.
This cinnamon has a delicious, subtle flavour that perfectly accompanies fruit, baking, cream and chocolate. It is with these cinnamon quills you would use to make mulled wine or to spice up a milky drink of cocoa.
Why not pop a whole quill or two into custard or cream whilst it's warming, allow the flavours to release and then remove the pieces before serving.
