Moroccan Spiced Preserved Lemons

This deeply lemony flavour is ideal for tagines, flavouring cous cous or rice and it is particularly nice stuffed into a roasting chicken or Christmas turkey.  

Baked lemon chicken is a must.  Slow cook chicken using at least half a jar of preserved lemons diced. Cover with foil to keep moisture.   Salad or roasted root accompinament works well with this dish.

For the Christmas turkey, squash the lemons roughly and slide under the turkey skin before roasting.  We also like to stuff the turkey with a load more lemons as their steam will keep your bird moist on a slow roast.
